Mongana basics: 2- Impact of sterilization
MENON, N. Ravi

In the last article, we discussed the underlying principles involved in the sterilization process. Proper sterilization has a profound influence on the kernel recovery in terms of the extraction rate as well as the kernel quality. The minimum sterilization temperature of about 130°C was not arbitrarily chosen but arrived at after exhaustive trials and sound research by Mongana scientists in 1952.
